Menu

This menu is a starting point only.  All meals will be customized to meet your preferences and dietary requirements.  Side dishes are also suggestions only and can be changed.  Desserts available upon request.

Gourmet Meals 

Beef, Pork, and Lamb 

Maple, Balsamic Pork Tenderloin
Succulent roast slices of pork with a rich maple, balsamic sauce.  Served with herb- roasted winter vegetables.

Island Pork Tenderloin with Pineapple Chutney
Tender pork seasoned with a spicy jerk rub and grilled; served with a tangy pineapple and red pepper chutney and Basmati
Rice with Mint and Cilantro

Greek Meatballs
Tasty lamb meatballs (ground chuck or turkey may be substituted), cooked in a tomato, garlic and olive sauce.  Served with lemon couscous and feta yogurt dressing.

Beef Tip Stroganoff
Tender beef tips and cremini mushrooms in a rich beef sauce with tangy horseradish sour cream.  Served with buttered egg noodles. 

Mediterranean Pork Chops
Boneless pork chops cooked in a flavorful sauce  with olives, capers and Marsala wine.  Served with Parmesan Orzo
 

Beef Carbonnade
This hearty stew owes its rich flavor to a slow braise in dark beer.  Served with mustard croutons and mashed potatoes with cheddar and kale.

Feijoada (fay-ZWAH-duh) Quesadillas
Inspired by the national dish of Brazil, flour tortillas are filled with a spicy mix of black beans, kielbasa and goat cheese.  Served with tomato mango relish and rice with garlic and greens.

Ragu ala Bolognese
A luxurious creamy Bolognese sauce made with a combination of ground turkey, beef, and pork.  Served over pasta with herbed garlic bread.

Poultry 

Tuscan Chicken with White Beans and Rosemary
Tender and flavorful breast and thighs in a hearty sauce of beans, carrots and fennel.  Served with cheesy herb biscuits.

Chicken Bistro Cakes with Tomato Concasse
All the flavor and looks of a good crab cake, but with chicken! Paired with a zesty tomato sauce and served with prosciutto and pea rice pilaf

Chicken Ragu with Mushrooms and Artichokes
Boneless, skinless chicken breasts braised in a light sauce with mushrooms, leeks, and artichokes.  Served with buttermilk mashed potatoes.

Chicken Cacciatore
Tender chicken pieces in a delicious sauce with pancetta, mushrooms, and roasted red peppers.  Served with creamy baked polenta 

Chicken and Sausage Cassoulet
Sautéed chicken thighs and chicken apple sausage mixed with tomatoes and white beans and topped with crispy breadcrumbs and goat cheese.  Served with sweet potato ratatouille. 

Chicken, Sausage and Shrimp Gumbo
Louisiana comfort food at its best!  Served with Sweet Potato Biscuits

Phyllo Turkey Wraps
Baked, flaky phyllo encases a tasty Mediterranean-inspired filling of turkey and feta cheese and is topped with dill yogurt.  Served with couscous with artichoke, sun-dried tomatoes and pine nuts.

Jambalaya-Stuffed Peppers
Sweet red, yellow and orange peppers stuffed with Cajun turkey and rice and nestled in a zesty tomato sauce.  Served with corn muffins. 

Fish and Seafood

Crispy Crusted Baked Fish
Flaky white fish is baked on a bed of vegetables with a crispy topping of breadcrumbs, parmesan cheese and potato chips.  Served with lemon snap peas.

Halibut all Diavola
This mild white fish is complemented by a spicy Italian-style tomato sauce that’s light and flavorful.  Served with lemon-parsley couscous.
 

Slow-Roasted Chipotle Salmon with Lime-Ginger Sauce
Salmon is glazed with a spicy Southwestern mixture and finished with a light refreshing sauce.  Served with fiesta rice.

Salmon with Lentils
Pan-seared salmon served on a flavorful bed of vegetables and lentils.  Served with herb biscuits

Veracruz Fish Fillets
White fish cooked in a tangy sauce of tomatoes, olives and capers and served with feta couscous.

Asian-Seared Salmon
Salmon is first rubbed with Asian seasonings, seared until crispy and drizzled with a tangy cilantro dressing.  Served with stir-fried Asian vegetables and basmati rice.

Fiery Shrimp Cakes
Shrimp is the star ingredient in these spicy seafood cakes.  They are served with a zesty tomato sauce and green beans with toasted almond gremolata

Shrimp and kielbasa in a rich creamy tomato sauce, served with old-fashioned grits and succotash
 

Meatless 

Eggplant Rollatini
Roasted slices of Eggplant, rolled and filled with cheese and fresh herbs and topped with a hearty Spanish tomato and red bell pepper sauce.  Served with herbed orzo and peas.

Black Bean Enchiladas
Spicy black bean filling in corn tortillas topped with salsa verde.  Served with corn salsa and red rice.

Vegetarian Thai Curry
Potatoes, green beans, cauliflower, eggplant and red bell peppers simmered in a creamy red curry sauce and served with basmati rice.

Portabello Quesadillas
Mushrooms, roasted red peppers, arugula and Swiss cheese in crispy tortillas.  Served with caramelized corn sauté and roasted red pepper aioli. 

Curried Lentil Burritos
Lentils, potatoes, tomatoes and spinach seasoned with aromatic Indian spices, wrapped in tortillas and topped with cheese and cilantro-scallion spiced yogurt.

Homestyle and Family Meals

Southwestern Sloppy Joes
Whole wheat hamburger buns are topped with Southwest seasoned lean ground turkey, corn, and black beans.  Served with spicy roasted sweet potato fries.

Comfort food at its best.  Served with mashed potatoes and green beans.

Turkey and vegetables in a creamy sauce, topped with herbed biscuits.

Primavera Stuffed Shells

Chicken Tetrazzini
Old-fashioned chicken and pasta casserole, topped with crispy breadcrumbs, almonds and parmesan cheese.  Served with garlicky lemon broccoli.
